Spinach with Shirasu

Ingredients
1 bunch fully grown spinach, cannot substitute with baby spinach
1 teaspoon oyster sauce
1 teaspoon sesame oil
1 teaspoon soy sauce
1/4 teaspoon sugar
1/4 teaspoon salt
1 tablespoon sesame oil
1/2 tray of shirasu (usually about 2oz)
1 teaspoon sesame seed (optional)

Directions
SPINACH
With the root cleaned and uncut, boil the spinach in water for about 10 seconds.
Transfer immediately to a small bowl of ice water. This will stop the spinach from cooking any further.
Cut off and discard the root end.
Cut the spinach into 1.5-inch pieces. Transfer to a small mixing bowl.
Add the oyster sauce, sesame oil, soy sauce, sugar, and salt. Mix until the spinach is well dressed.
FINISHING TOUCHES
Heat the sesame seed oil in a small pan over medium-high heat. Add the shirasu and saute until golden, about 2 minutes.
Garnish the fish over the spinach.
